Raspberry Swirl Cheesecake

Hi Ya

This post is going to be a how make raspberry swirl cheesecake post. Raspberry Swirl Cheesecake is one of my favorite desserts and isn't that hard to make and it tastes amazing so lets get started with the baking.

You will need...

1 cup (about 10) finely ground Oreo biscuits (including filling)
40g unsalted butter, melted
1/2 cup frozen raspberries, thawed

2 tbs icing sugar, sifted
375g cream cheese
1 cup (220g) caster sugar

3 eggs

1 tsp vanilla extract

How to make it...
Preheat oven to 170°C. Line a 12-hole muffin pan with paper cases.
Mix ground oreos and butter in a bowl and then divide mixture among the paper cases pressing down well. Then bake for 5 minutes and remove and let them cool.

Place the cream cheese in a bowl and use to electric mixer to beat the mixture until it is light fluffy. Add the caster sugar in a slow, steady stream beating until combined. Add eggs, one at a time, beating after each addition, then beat in vanilla. Pour cheese mixture over biscuit base.
Mash the raspberries to a pump with the back of a fork, Strain through a sieve into a bowl, pressing down well and then discard seeds and stir in the icing sugar.

Place small drops of berry puree on top of the cakes and use a wooden skewer to carefully swirl through cheese mixture. Bake for 10-15 minutes until just set.

Let the cakes cool down and then add raspberries to serve.
